Ingredients for Veg Nargisi Kofta
for koftas
Paneer – 250 grams
Soya Vadi – 1 cup
Corn Flour – 4 tbsp
Maida – 4 tbsp
Turmeric – 1/4 tsp
Red chili powder – 1/4 tsp
Cashew – 1 tbsp
Raisins – 1 tbsp
Black pepper ground – 1/4 tsp
Oil – for frying
Salt – as per taste

for gravy
Tomato – 3-4
Melon seeds – 2 tbsp
Coriander Powder – 1.5 tsp
Turmeric – 1/2 tsp
Kasuri methi – 1 tbsp
Green chili – 1-2
Ginger – 1/2 inch piece
Cashew -8-10
Cumin – 1/4 tsp
Cloves – 2-3
Big cardamom – 1
Bay leaves – 2
Cinnamon – 1 inch piece
Black pepper – 1/2 tsp
Butter – 1 tbsp
Garam Masala – 1/4 tsp
Green coriander leaves – 2-3 tbsp
Salt – as per taste

How to make Veg Nargisi Kofta
To make Veg Nargisi Kofta, first, grate the paneer. Now take out about 50 grams of cottage cheese from this paneer and put it in a bowl and mix it well by adding turmeric, red chili and a little salt. After this, add 1 tbsp chopped raisins and cashews and mix it. Now the stuffing for the koftas is ready.
Now take the remaining grated paneer and put it in a mixing bowl. Add cornflour and salt to it and mix it all. Prepare dough by adding little water and break it into small pieces to make koftas. After this, make small balls from the prepared stuffing.

Now take a little mixture of paneer dough in your hands and make it round and give it the shape of a bowl. After this, keep the stuffing ball in it and close it well. Give it an oval shape and keep it aside in a plate. Similarly make koftas from all the dough and stuffing. After this, put all purpose flour in a bowl and prepare a thin solution by adding water to it. After this, put the koftas one by one in this solution and take them out and keep them like this for 15 minutes.
Now put oil in a pan and heat it. When the oil becomes hot, add maida coated koftas to it and deep fry them. Fry them till they turn light brown and then take them out in a plate. Similarly fry all the koftas. Keep in mind that the koftas should not be fried in low flame or else the paneer may melt and come out. Keep the prepared koftas aside in a plate.

Now start the process of making gravy. For this, heat 2-3 tbsp oil in a pan and heat it. After the oil is hot, add all the dry spices including bay leaves, cloves, black pepper, cinnamon and fry it. When the spices are roasted well, then add chopped tomatoes, green chilies and ginger paste and mix it. Now cook this mixture till the tomatoes become soft.

When the tomatoes become soft, then add red chili and salt as per taste in the gravy. Fry it till the gravy starts leaving oil. While cooking the gravy, keep stirring it in between. After this, make a paste of cashew and melon seeds in it (keep soaked in water for half an hour between cashews, melons first). After this, add this paste to the spices and fry till the oil separates.
When all these ingredients are fried well, then add one tablespoon butter, one and a half cup water, garam masala and green coriander leaves and cook it while mixing it well. After this cover the gravy and let it cook for 5 minutes. Keep the flame low during this. In this way the gravy will be ready. Now put the already prepared koftas in the prepared gravy and mix it well with the gravy. Now serve Veg Nargisi Kofta hot with roti, naan or paratha.
